Rated 5 out of 5 by from Outstanding Cookware We have had this cookware set for about 8 years and they perform outstanding! Except for some slight scratching from use and abuse, they are in great shape. You must change your cooking habits and USE MEDIUM HEAT! These pans conduct heat very well and heat up fast and hot on only medium heat. If you insist on using a higher temperature setting you are just going to frustrate yourself and burn everything. If you keep your burner setting at medium or below and use light oil, your food will cook wonderfully and won't stick to the pans. If you do burn your food and dish soap and a soft scrub sponge won't remove the residue, buy yourself some Bar Keeper's Friend scouring powder and you will be able to bring back the shine to your pans. I recommend washing again with dish soap after using Bar Keeper's Friend to remove any left over residue and odor from the scouring powder. I have found these pans to be practically indestructible and great to cook in over MEDIUM HEAT or lower.

Rated 1 out of 5 by from Highly disappointed I am super disappointed in these pans! I have used calphalon brand pans for years. My last set lasted me ten years before I decided to purchase a new set. I was so excited when I found this set. I was in love with the stainless steal! Big mistake. Big. Everything I cook in these pans burns and sticks. Veggies, meat, potatoes- literally everything. I've tried prepping the pans, using more butter, a cooking spray, nothing works. Then after my entire meal is burnt to the pan it is the biggest pain trying to get it off with washing!! The pan has to soak in hot water for hours to remove it!! Unfortunately I would never recommend these pans to anyone. It's a shame because I was always a huge Calphalon supporter.

Rated 1 out of 5 by from Warped after first use I always thought that Calphalon would be the pans I would use for years. Well I dont think that is going to happen. We just received these pans as a wedding gift and after the first time use became warped. It is not as if we cranked the burners on High, tossed ice water in, or submerged the pan after use. Now, when I place the Saute pan or the 10 inch skillet on the counter, they will wobble. Now we are waiting to see if the others will follow this trend.

My previous set was also Calphalon and I liked it but it was nonstick and I wanted to try stainless steel. What a complete waste of money! Not only does the food stick ALL the time, but a couple of my pans have warped after the first use. I recommend saving your money and looking elsewhere!

Rated 5 out of 5 by from Stainless or Anodized - Requires Technique I have both Calphalon Anodized and Stainless cookware. Both are excellent well built, well designed cookware. But, they are not nonstick. And using cookware non-nonstick requires understanding a couple cooking techniques. First, oil is required. Second, heat is required. Third, deglazing the pan with water, wine or sauce is necessary - and a good thing - because that 'fond' on the bottom of the pan is all flavor and color for the finished dish. Last night I pan seared chicken breasts, then deglazed the pan with some puttanesca sauce, replaced the chicken, covered it with grated parmesan put it under the broiler for 2m for a nearly instant chicken parmesan. Cleanup was simple because the tomato sauce had lifted the sticky bits and incorporated them, and their flavor, into the sauce. And, a little Bon Ami or Bartenders Friend will remove any thing remaining. Exception: Scrambled Eggs. For that, use a non-stick pan.

Rated 1 out of 5 by from Very dissatisfied I thought long and hard about buying these pans I looked at different ones I have had calphalon before felt good and solid.I got them home washed them up dried them all by hand put away got rid of my old pans .Cook fried potatoes in one they stuck could not get the potatoes unstuck I waited to the pan cooled down washed it was not to hard to get clean But everything sticks to these pans No I do not cook using high heat I use medium I have been cooking for a long time and I'm careful with my cook wear and things they are too expensive not too take care of.Please take care of this It is too much money to throw away on pans I can not use.My husband was in business for years CUSTOMER SATISFACTION NEED NEW PANS

Rated 4 out of 5 by from Love the pans, hate the lids! I have had this cookware set a couple of months now and have been very pleased so far. I love the high end look and feel of the pans, they look great hanging from my pot rack. I purchased these because I have a smooth top range and the thicker bottoms appealed to me as well the induction compatibility, as I would like to purchase an induction range in the future. My last set of Calphalon pans over time would warp because the bottoms weren't very thick. The larger the pan the more it warped. These pans have a thicker bottom and work great on my smooth top range. The heat transfer is better and I am getting the cooking results I wanted (on a smooth top range the pan has to make contact with the glass to transfer the heat properly). I even purchased a few additional pieces to get the sizes I wanted. I love being able to put them in the oven as well! I really wanted a set with metal lids. Most cookware sets seem to have the glass lids. With the glass lids the lid handles get hot very quickly. I have solved the problem by having a pot holder handy. My last set of pans had metal lids and the handles never got hot. Overall I love the pans and plan on using them for a long time. If they had metal lids, they would be perfect!

Rated 5 out of 5 by from Amazing Product. The cookware is amazing. It is so much better then a strictly aluminum set. We cook with both cast iron and this stainless aluminum core set. No more cheap lightweight pans that tend to heat uneven or warp under medium/medium high heat. JCP had an amazingly low price for this set. Some stores were almost twice the price on sale. Extremely happy.

No they do not...
You don't want cookware with this toxic (non-stick) coating applied.

Calphalon Tri-Ply has polished 18-10 stainless steel inner and outer layer over a solid tip to tip layer of aluminum. This insures even heating throughout the pan as opposed to cookware that simply uses an aluminum or copper layer on the bottom.
When used properly, (no need to ever use high heat) these pans are very easy to clean.
After use, let the pan cool on top of the stove. Never rinse with cold water while the pan is still hot.
If you have cooked something messy or sticky, once the pan is cooled, add some warm water to the pan and place the pan back on burner at warm heat. after a couple of minuets, you will simply wipe the pan clean.

Calphaoln tri-ply 13 pc is a great set of cookware that will last a life time. I've been using a smaller set of 5-ply stainless cookware for 30 years and it's still good as the day I got it. Still using it...just needed to add more pieces.

They are induction ready. I haven't used on induction but confirmed prior to purchase they are induction ready. A simple maget test on the bottom will confirm induction ready.

I haven't tried on an induction range but part of my decision on purchasing this set was that it be induction ready. A simple magnet test on the bottom of the pot verified it is induction ready. Beware because not all stainless steel is magnetic/induction ready.

They are stainless. The rivets go from the inside thru the pot, thru the handle and then get seated/crimped. Assume the rivet is one piece and is definitely magnetic. Aluminum is non magnetic.. I assume the process to secure the rivet slightly demagnetizes the outer portion. A stronger magnet still attaches to the outer portion just not as much.

According to Calphalon, they're using aluminum rivets (with interior stainless caps) on all of their tall pans. Some short walled pans have all stainless rivets, others have aluminum. They didn't say which pans get the stainless rivets.

I've made the assumption you're asking because the aluminum rivets will take on a milky appearance after being put in the dishwasher. . I've never placed my pans in the dishwasher. I have, however, put the lids in the dishwasher with no problems

Stainless. The inner portion of the rivet (inside the pot) is more magnetic than the outside portion on the handle. Not sure why but thought I would advise.

It’s a tri-ply construction meaning it’s both. Heavy-gauge, aluminum core surrounded by two layers of stainless steel provides excellent heat conduction for browning and enhanced control of the cooking process. These 3 layers enable it to heat quickly and retain heat throughout the cooking process.
