Answer: 
I don't have cephalon, so I can't compare, but my older pan has no scratches. Also I do not use metal utensils with these pans. My main concern was ease of cleaning.

I have cephalon pieces and I feel this product has the same quality, hopefully will prove to be better.

Answer: 
The cookware will perform on higher settings, however we recommend cooking on medium as that temperature range is generally between 325-375 degrees. You may use any kind of utensils on this set, however, we generally recommend using silicone utensils on all brands of cookware to prolong their life and reduce every day wear and tear.
