I put a very small amount of olive oil on a plate with a little salt and pepper and turn the fish over until it is lightly coated. The pan gets hot quickly so watch it till you are used to it. It retains the heat evenly. Leaves a lovely crust and grill marks on the fish with a wonderful taste. I am 72 and this is the best little pan I have ever had.

Rated 4 out of 5 by from Light weight with easy cleaning. I like how light weight this pan is. Meats have come out evenly cooked. I soak the pan and food and grease comes right off. I have not put it into the dishwasher. I don't want the finish to wear off.

I would like to say that I bought one in August of 2015. Now the bottom shows silver metal color material. The grill area also shows silver metal color material. The coating seems to be wearing off. I used this pan weekly and MOSTLY twice or more times a week. It was really handy, the food came out great, but it may not have great mileage if it is used daily. That silver metal color material may be aluminum. So just FYI!

I answered before (Janey). I just wanted to say you may want to keep in mind that this pan is described as aluminum. You may want to look into how much aluminum may end up in food when it is used. I am beginning to look into pans made out of other materials.

My estimate using a ruler at home is 1.5 inches (1 and a half inches). This is a small, but very handy pan for grilling meats and tofu. I haven't tried grilling vegetables on it yet. I usually stir fry, steam, or boil veggies.
