Pumpkin Spice Coffee to Warm your Soul
A quick recipe to enjoy by the fireplace with family and friends.
Ingredients:
1 cup freshly brewed coffee
1 cup almond milk
2 tablespoons pumpkin puree
2 tablespoons maple syrup or honey
¼ teaspoon vanilla extract
½ teaspoon pumpkin pie spice, or ¼ teaspoon cinnamon plus ¼ teaspoon nutmeg
whipped cream, optional
Instructions:
Step 1: Use a coffee maker to freshly brew a cup of coffee.
Step 2: Mix all ingredients in a medium saucepot and heat through, stir occasionally, and make sure not to boil.
Step 3: Top with whipped cream (optional).
Step 4: Serve hot or over ice.
Pumpkin Spice Snickerdoodles that are Soft and Chewy (not Cakey!)
A perfect cookie for everyone.
Ingredients:
1 and 1/2 cups all-purpose flour, spooned & leveled
1/4 cup pumpkin puree
1 teaspoon pumpkin pie spice
1/2 teaspoon ground cinnamon
1 teaspoon cream of tartar
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup light brown sugar
1 egg yolk room temperature
1 teaspoon pure vanilla extract
1/4 teaspoon salt
1/2 teaspoon baking soda
For the cinnamon sugar coating:
2 tablespoons (25 grams) granulated sugar
1 teaspoon ground cinnamon
Instructions:
Step 1: Whisk together the flour, pumpkin pie spice, cinnamon, baking soda, cream of tartar, and salt until well combined. Set aside.
Step 3: In a large mixing bowl using an electric mixer, cream together the granulated sugar, brown sugar, and butter for 1 to 2 minutes. Add in the egg yolk and vanilla extract, followed by the pumpkin puree.
Step 4: Combine the dry ingredients with the wet ingredients. Cover tightly and refrigerate for 30 minutes.
Step 5: Preheat the oven to 350-degree F and line two large baking sheets with parchment paper or silicone baking mats and set aside.
Step 6: Remove the cookie dough from the refrigerator and using a cookie scoop, scoop the cookie dough onto the prepared baking sheets (leave a little room between each one). You can even use cookie cutters to give different shapes to the snickerdoodles.
Step 7: In a small mixing bowl, whisk 2 tablespoons of sugar and 1 teaspoon ground cinnamon for the coating. Roll each cookie dough in the cinnamon-sugar coating and place it back on the baking sheets.
Step 8: Bake for 10 to 13 minutes or until the cookies are set. Remove from the oven and allow to cool on the baking sheet for 10 minutes, then transfer the cookies to a wire rack to cool completely.
Pumpkin Hummus that’s Creamy and Addictive

Ingredients:
1 cup pumpkin purée
1 can (15-oz.) chickpeas, drained and rinsed
1/2 cup tahini
1/4 cup apple cider vinegar
2 tablespoon extra-virgin olive oil
1 chipotle pepper in adobo sauce
1/2 teaspoon ground cinnamon, plus more for garnish
1/2 teaspoon paprika, plus more for garnish
Kosher salt
1 teaspoon toasted sesame seeds, for garnish
Instructions:
Step 1: In a large food processor, blend all ingredients until smooth.
Step 3: Season with salt and spoon into a bowl.
Step 4: Garnish with sesame seeds, paprika, and cinnamon, and serve with pita chips and green apple slices.
