While you may have started with Easter home décor already, we bring you all the Easter brunch décor and dining essentials you’ll need this year. You can buy them online from JCPenney at deeply discounted prices. That said, here are our truly delicious recipes to serve at the Easter brunch other than the Easter ham.
Lemon Ricotta Waffles
Impress your guests with colorful and fluffy waffles. The citrusy flavor is sure to lift up the moods!
INGREDIENTS:
1 1/2 c. all-purpose flour
4 large eggs
1 c. whole buttermilk
2 tsp. granulated sugar
1 c. whole milk ricotta
1 1/2 tsp. baking powder
1 tsp. salt
3/4 tsp. baking soda
2 tsp. vanilla extract
2 tsp. lemon zest plus 2 tbsp. lemon juice
Butter, for greasing
Maple syrup, fresh berries, and ricotta cheese, for serving
INSTRUCTIONS:
Step 1: Tie your apron around and start whisking together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
Step 2: In a separate bowl, whisk together the eggs, buttermilk, ricotta, vanilla, lemon zest, and lemon juice.
Step 3: Slowly add the egg mixture to the flour mixture and stir until just combined.
Step 4: Heat a rotating waffle maker and lightly grease the waffle plates with butter.
Step 5: Working in batches pour a spoonful of the batter. Rotate and cook until the sides are set, about 10 minutes, until golden brown.
Step 6: Wipe the plates clean with a paper towel and grease with more butter in between batches.
Step 7: Serve the waffles hot with maple syrup, fresh berries, and a dollop of ricotta or ice cream.
Spinach Quiche
An all-time crowd-pleaser.
INGREDIENTS
1 refrigerated pie crust (from a 14-oz. box)
2 tbsp. butter
1 small yellow onion, chopped
1 small red bell pepper, chopped
2 garlic cloves, chopped
4 large eggs
1 1/4 c. half-and-half
1/2 c. sour cream
1 1/2 tsp. salt
1/4 tsp. black pepper
Pinch of ground nutmeg
1 10-oz. package frozen chopped spinach, thawed and squeezed dry
1 c. shredded sharp cheddar cheese
1/4 c. finely shredded parmesan cheese
INSTRUCTIONS
Step 1: Preheat the oven to 375° with a baking sheet on the center rack.
Step 2: Fit the pie crust into a 9-inch pie plate (about 1-inch deep). Fold the edges of the crust under and crimp as desired. Chill in the refrigerator while preparing the filling.
Step 3: Melt the butter over medium heat in a medium skillet and add the onion and bell pepper.
Step 4: Cook until softened, about 10 minutes (keep stirring occasionally).
Step 5: Add the garlic and cook, until fragrant, about 2 minutes.
Step 6: Remove the skillet from heat.
Step 7: Whisk together the eggs, half-and-half, sour cream, salt, pepper, and nutmeg in a large bowl.
Step 8: Stir in the spinach, cheddar cheese, parmesan cheese, and bell pepper mixture. Pour into the prepared crust.
Step 9: Place the quiche on the preheated baking sheet and bake until it has puffed in the center, is just set and the crust is golden, 40 to 50 minutes.
Step 10: Place the quiche on a wire rack to cool. Then transfer it to a footed cake plate and serve warm or room temperature.
A Classic Orange Crush
It’s hard to beat a classic orange drink on a sunny Easter Sunday.
INGREDIENTS
1 cup fresh orange juice
4 oz. orange-flavored vodka
2 oz. triple sec or other orange-flavored liqueur
Lemon-lime or orange soda
For garnish – orange slices
INSTRUCTIONS
Step 1: In pint glasses, add cubed or crushed ice.
Step 2: Divide the vodka, triple sec, and orange juice evenly between the glasses. A measuring cup may come in handy here to ensure even distribution.
Step 3: Top the drinks with a splash of lemon-lime orange soda.
Step 4: Tuck an orange slice into each glass.
Alternately, you can mix all the ingredients in a serving pitcher for easy transportation. Also, ensure you have a few dish cloths and kitchen towels around to mop up accidental spills.
